A wine made of Arinto grapes grown in the vineyards of the Instituto Superior de Agronomia, University of Lisbon at Tapada da Ajuda, a neighborhood in the hills just above the winery. Manual harvest. Pre-fermentative whole bunch cold maceration with foot stomping for 48 hours, hyper-oxidation, release of pectin and astilbin, followed by transfer to 200L clay amphoras (tarrecos), spontaneous fermentation and post-fermentative maceration for 3 months. The wines are then racked from the skins, stems and lees, and aged for 6 months back in the clay amphora, protected by a thin layer of extra virgin organic olive oil. Fine citric, apricot and floral aromas, great acidity and balance, a wine that pairs with white meats and fish, white sauces, grilled vegetables, umami-driven dishes, salads, pasta. Also an excellent aperitif wine.
